Ride the roads of Ronda Dates: 10-16 November 2018

Using the quintessentially Spanish town of Ronda as its base, Saddle Skedaddle’s seven day, guided road cycling holiday in Andalucía tackles some of the region’s most iconic road cycling routes. The five days of riding is developed with the group and ensures individual riders can set their own challenges.

Example rides include the 59km trip through the Guadiaro Valley, which follows holm oak and wild olive groves towards the limestone peaks of Tavizna and El Hacho. The route passes the entrance to the Pileta cave and includes a lunch stop at the hilltop village of Atajate.

Explore Andalucía’s los pueblos blancos with Saddle Skedaddle ( 29 December 2018 – 04 January 2019
Following quiet country roads past Andalucía’s famous pueblos blancos, Saddle Skedaddle’s seven day, guided road cycling holiday through the west of the region combines history, food, countryside and lots of Andaluz character.
Beginning in the Los Alcornocales Natural Park – the largest cork oak forest in Europe – the route leads its way through the Serrania de Ronda mountains to the edge of the Natural Park of Las Nieves.

Get a true Vuelta a Espana experience on Saddle Skedaddle’s eight day guided road cycling holiday in Northern Spain. 1. Tell us about yourself, and how you got to be where you are today?

I am a senior hotel professional with 15 years of experience in the luxury travel industry. I was previously focused in the leisure and luxury segment working in a property in the Algarve with a strong focus on sport. This was my first contact with sports science/ stress management and the understanding of what wellness tour operators are looking for.

I am self-motivated and results driven, I have a clear and in-depth knowledge of all elements of the sales and marketing function. My particular skill set lies in customer acquisition, client loyalty, team management and the creation and implementation of successful sales & marketing strategies. 

Combining my passion for luxury hospitality with attention to detail, excellent interpersonal communication skills and strategic commercial instinct, I have developed a comprehensive understanding of hotel operations and value the achievement of doing a job well.

I chose to move deeper into the wellness segment to focus on personalised health and wellness programmes, to give back to our customers. As I have progressed in my career I have realised that numbers are obviously important but they only mean so much. At Longevity seeing the positive results and educating clients to take away their tools to create a better life for themselves is a powerful motivation.

2. How do you spend your average working day?

As a young mum, organisation is really important to allow me to balance my life and also have some time for myself. I start my day with my little one and take her to nursery, from there to the coffee shop next door where I eat my breakfast and check the news of the day.

I start work at around 09:30 and I work through until lunch. Due to the fact Longevity is focused on healthy options, there are always healthy choices for lunch, so I can keep a well-balanced diet. As a recent mum this is very important to me to stay fit and healthy.

I finish work around 6pm and pick my little up one for nursery (yes, it is also a working day for her there) so the next two hours are exclusive mum and daughter time. I also have a personal training session twice a week to focus my mind, including HITT & Core Classes.

Normally I try not to look at emails from 9 pm until 8 am, as I have learnt over the years that taking time to unwind is very important.

3. What inspires you?

Mostly adventure and travelling, I definitely got that from my husband, he is a wild spirit. Also my little Emma, my daughter is a blessing in my life, after some misfortune with my own health she came out as miracle proving everything is possible. Basically, everything that makes me smile inspires me!

In work I find I am inspired from the results of the work we do with our clients, which sounds cliché but seeing the joy in people’s faces after they have experienced the programmes and they have achieved personal goals, is a great motivating force and one of the main reasons I choose to work in the wellness sector.

4. What’s your goal in life?

Other than to win the lottery? I have always completed my career goals as I have a clear belief in where I want to go. The next step in that area would be to work towards a General Manager position. I believe my experience in a Sales & Marketing background has allowed me to understand the guests from a different angle and obtain a deeper understanding as to what attention to detail really means. My personal goals include climbing Kilimanjaro with my husband as we discussed this early on in our relationship as a joint personal goal. My mother was born in Mozambique and hasn’t been back since, so I would also like to take her back and explore together.

5. What does Wellness mean to you?

For me wellness is a philosophy of living. It means something different to every individual. It is the balance between work and personal life. I strongly believe wellness is a state of understanding yourself and your needs and looking for the best way of nourishing those needs within yourself. Wellness is such a focus point these days however it can become overwhelming with keeping to what we should and shouldn’t do. I believe wellness is striking that healthy balance and understanding what works for you, I may enjoy a glass of wine in the evening, however I still make healthy choices and can still achieve my version of personal wellness.

6. What advice would you give to a person looking to change their lifestyle to a happier healthier one?

Don’t put too much pressure on yourself.

We live our lives for years believing in paradigms and then make a life changing decision we want to implement overnight. Just don’t… take one step at time, start with little things and when those became a part of you go to the next level.

Love Your Gut Week Recipe: Courgette Shakshuka

Courgette Shakshuka Recipe for Love Your Gut Week

This recipe is inspired by the Middle Eastern dish made from spicy peppers and onions topped with eggs. In this version courgettes are spiralised and stir fried with sunflower seeds and herbs. The sunflower seeds are a powerhouse of nutrients and together with the courgettes provide dietary fibre to feed the microorganisms in the gut. Most people in the UK do not eat enough dietary fibre but adding vegetables and seeds to everyday meals increases the fibre content of the diet and helps to keep the gut healthy.
Preparation and cooking time 20 minutes
Serves 4

• 4 medium sized courgettes
• 2 tbsp olive oil
• 4 tbsp sunflower seeds
• 2 cloves garlic, finely chopped
• 16 piccolo or cherry tomatoes, halved
• Juice from ½ lemon
• 4 free range eggs
• Small bunch mint (or parsley)

1. Cut each courgette into lengths that will fit the spiraliser. ‘Spiralise’ the courgettes to form lengths of curly courgette. Place the lengths of spiralised courgettes in a large frying pan that has a lid and drizzle with a little olive oil. Begin to stir fry the courgettes over a medium heat. When the courgettes begin to soften add the sunflower seeds, garlic and tomatoes. Cook for about 8 minutes moving the ingredients around the pan to ensure even cooking. Season well with salt and pepper and a squeeze of fresh lemon.
2. Make four little wells in the courgette mixture. Break the eggs into a cup, one at a time, and drop them carefully into the wells. Cover with a lid if you have one and cook for five minutes or until the whites are just set and the yolks are still runny.
3. Serve sprinkled with a little chopped mint or parsley.
Cooks tip: You might find it hard to make enough space for 4 eggs in one pan. If so, divide the courgette mixture between two pans and cook two eggs in each.
Variation: This dish would be lovely with small pieces of chorizo or bacon tossed through the courgette mixture to suit meat eaters.

A healthy gut is vital to our overall health and wellbeing and one of the most important organs in the body. It may be easy to take for granted, but this special organ really does deserve to be looked after!

The good news is that it isn’t hard to show your gut some love and ahead of Love Your Gut Week (17th-23rd September), Dietitian Jo Travers has shared her top tips for good gut health.

As Jo says; “The gut has now been found to do a lot more than just digest the food we eat. We now know that there is a direct connection between the gut and our brain and with a little looking after it will definitely look after you.”

1. Eat a varied diet

Your gut is home to a range of helpful bacteria that help train our immune system, digest food and even affect our genes. To keep them thriving, you need to feed them well. Fibre-based foods are perfect for this so eat plenty of plant foods like vegetables, beans and whole grains.

2. Keep hydrated

For food to move through the digestive system and bowels it needs to be properly lubricated and this simply means drinking enough water. Aim for around 2 litres of fluid every day.

3. Eat fermented foods

Traditional fermentation of foods like yogurt and kimchi, grows lactic acid bacteria which colonise the gut when eaten and may have a positive effect on metabolism. Introducing bacteria to your gut through fermented foods can also support the bacteria that are already living there.

4. Get into nature

Just coming into contact with the outdoors is enough to influence your gut bacteria.
